Bikini Recipe
Makes enough for 10 servings
Ingredients for the Clementine Cordial (yields 750ml)
300ml newly squeezed clementine juice
200ml fresh lemon juice
500g caster sugar
Ingredients for the Cocktail (makes 850ml, enough for 10)
400ml decent vodka
100ml classic gin
150ml peach schnapps
200ml citrus syrup (as made above)
Fresh cranberries, as a garnish
Mandarin essential oil, to finish
Directions
To prepare the Citrus Syrup: Place all the components in a saucepan, bring to a simmer, agitating to dissolve. Next, take off the stove allowing it to reach room temperature completely. Transfer into an sealable bottle, cap it and refrigerate it in the refrigerator, it can be stored for about one month.
For the Batch Mix: Pour all the liquid ingredients into a sizeable container, let it rest for 60 minutes, then pass it through preferably using cheesecloth, so it's perfectly clear.
For serving: Pour 85ml of the batch mix into your stirring glass packed with ice, and stir gently for one minute until cold. Filter to a cold coupe glass or equivalent, top with a few cranberries and complete it by giving it a quick spritz of the essential oil above the glass.
